They lose energy after penetrating through an inch of food. Hence, foods like meat or chicken which require cooking from inside are cooked only from outside, while the inside portion is cooked via conduction. This is the reason why microwaves have a "standing time". During this time, food keeps on cooking evenly when the hotter parts of food will pass heat to cooler parts via conduction.
