To make the shortcakes, one needs to cream the butter and put sugar on a suitably flat surface with palm till it turns light and creamy.Now add some vanilla essence and mix it well. Next make a soft dough by adding flour and almond powder and continue mixing it till this dough is formed. This entire dough should be refrigerated for 15 minutes.
Divide this dough in equal portions of six pieces. Then, take a dusted rolling board and roll each portion into the length of required diameter you want to.
Prick gently across the circle and bake it in a pre-heated oven at the temperature of 150°c (300°f) for 20 to 25 minutes. At this stage, it should turn light brown in colour.
How to proceed
Keep a shortcake on a clean surface which is dry. Now pipe out 25% of the beaten whipped cream on top and put equal quantity (25%) of the strawberries on it.
Now repeat the process with other sandwich. Again pipe out 25% of the beaten whipped cream at the top and place another percentage of same quantity of strawberries over it. Repeat the same process by placing one more shortcake over it.
Make decor with icing sugar on top. Strawberry fan can then be used for garnishing it.
Repeat the above process to make another stuffed shortcake.This can be served immediately with strawberry sauce.
